Luscious Papaya & Avocado Salad
Here's the recipe for this luscious salad I made earlier for my tea.
It is just 'Bursting with Goodness'
1 ripe Papaya
1 ripe Avocado
Half a small Red Onion
A few washed Rocket Leaves
1 small Tomato
A quarter chunk of fresh Lemon
Chop everything up into small pieces
(I did mine extra small as I was sharing it with baby - he's 14 months & loved it)
Throw into a bowl & mix together
Squeeze the lemon juice over the top & mix again

(Incidently, Papaya was my eldest sons first ever solid food after breast milk, & in 16 yrs the only illnesses he ever had was 1 ear infection & an unknown rash once. Thats it! No colds ever!)
